Malpua Recipe

These are sweet crepes served in saffron syrup during Diwali function in North India.

 

Ingredients

Sweet crepes

1. All purpose flour: ¼ Cup

2. Evaporated milk: 1Cup

3. Ghee: For frying crepes

 

Syrup

1. Sugar: 1 Cup

2. Water: 1 Cup

3. Saffron strands: 6

4. Rose water: 2 teaspoons

 

 

Method

Crepes

1. Make batter of flour and milk.

2. On a hot griddle, put Ghee.

3. Pour 2 Tablespoon of batter. Cook. Flip over. Cook.

Both sides must be slightly brown. Repeat till till all the crepes are made

 

Syrup

1. Cook water and sugar, till you reach 224º F.

2. Stir in saffron, and rose water. Turn off heat.

3. Wait 5 minutes to let saffron work. Stir

 

Assembly

Pour syrup on the crepes. You may garnish crepes with crushed almonds.
