Kuttu (Buckwheat) Biscuit (Cookie) RecipeThis is not a gluten-free recipe, it has both buckwheat flour and All-purpose flour
IngredientsWet Mixture1. Un-salted butter: ½ cup 2. White granulated sugar: 1/3 cup 3. Large egg: 1 4. Pure Almond extract: 1 teaspoon Dry Mix1. Buckwheat flour (Kuttu Atta): ½ cup 2. All-Purpose flour (Maida): ½ cup 3. Salt: ¼ teaspoon 4. Baking powder: ¼ teaspoon 5. Cinnamon powder: ½ teaspoon
Add-insBroken cashews: ¼ cup
MethodStep 1: Wet Mixture1. Use Electric mixer. Beat butter for one minute 2. Gradually add sugar and beat till light and fluffy, about 5 minutes 3. Add egg and Almond extract, Beat one minute to form smooth mixture Step 2: Dry MixMix all ingredients well. Sift Step 3: Dough1. Gradually add dry mix to wet mixture, beating at low speed. 2. Stir in cashews. Wrap in plastic film. Refrigerate about 4 hours
Step 4: Baking1. Preheat oven to 325º F 2. Line a cookie sheet with Parchment paper. 3. Cut the dough in to 24 parts. Roll every part in to a ball. Press every ball to make a ¼" thick patty. Put the patty on the parchment paper. Continue till al the cookies are formed. There should be about 1" distance between the cookies 4. Bake for 10 minutes. Turn around the cookie sheet. Bake another 6 to 10 minutes til the edges start to turn brown. Remove from the oven |
