Gujia Recipe
Gujia is a half moon shaped deep fried pastry stuffed with nuts and reduced milk. This is a favorite on Holi throughout North India.
Ingredients
Khol
1. All Purpose Flour: 1 cup
2. Ghee: 2 Tablespoons
3. Cold Water: 2½ Tablespoon
Filling
1. Khoya Emulation
Ricotta Cheese: ½ cup
Dried Milk: ½ Cup
Ghee: 2 Tablespoon
1. Desiccated coconut: 1 cup
3. Crushed Nuts: ¼ Cup
Include your choice of nuts, almonds, pistachios. I prefer Cantaloupe seeds.
4. Raisins: 1 Tablespoon, washed rinsed and soaked in water for 15 minutes
5. Cardamom powder: ½ teaspoon
6. Powdered Sugar: ¼ cup
Method
Khol
Mix flour and Ghee well to make crumble. Add cold water to make soft dough. Keep aside in a cool place covered.
Filling
1. Mix Ricotta cheese and dried milk.
2. Heat Ghee in a pan. Add Ricotta cheese mix. Fry till, it starts to turn brown. Turn off heat.
3. Add remaining ingredients and mix well.
Making Gujia
1. Turn on Deep Fryer. Set to 320 º F.
2. Divide Khol dough into 12 balls. Keep the dough covered in plastic film. Roll a ball out into a 4-inch round. It should be about the thickness of a dime (10Ç coin).
3. 1 teaspoon of filling in the middle of lower half. Fold down the top. You have half moon shape. Seal the open side by fluting the edge.
4. Deep fry 4 to 5 minutes till Gujia is brown. |
