Gond Panjiri (Nuts and Tree-sap Fudge) RecipeMade with Gond Ghee Nuts sugar ginger to promote lactation during nursing
Panjiri is same as Katli. In Punjab it is called Panjiri. Gond Panjiri is made with Gond, and nuts. It is normally given to Nursing mothers. It is considered 'Hot Food' to help with the production of breast milk. Corn Syrup is used to reduce crystallization. It is optional.
Ingredients1. Gond: 2 Ounce Gond is sold as 100 gram package in Indian store. You need about half the package that will be same as 2 oz. 2. Ghee: ¼ cup 3. Nuts: 3½ Cups Nuts to roasted. Choose chopped and blanched: Almonds, Pistachios, Walnuts, Coconut, Chirongi Seeds: Pumpkin, watermelon, cantaloupe I do not fry seeds. They are very delicate. 4. Sugar: 1¾ cup 5. Water: 1¾ cup 6. Corn Syrup: 2 Tablespoon 7. Ghee: 1½ Tablespoon 8. Dried ginger powder: ½ teaspoon
Method1. Heat Ghee. Deep fry Gond in oil. It will puff up. Remove from oil and grind it in a food processor. 2. Fry nuts to be roasted. You should be left with about 1½ Table spoon of ghee. Keep it aside. 3. Add water and sugar. Cook in a heavy bottom pan to 224° F 4. Turn down temperature to low. 5. Add Corn syrup and left over Ghee from step 2. Stir well. 5. Turn off heat. Stir in all the powdered Gond, roasted nuts, seeds, and dried Ginger powder. 6. Let it cool to 150° F. 7. Pull and gather. Knead to form dough. 8. Set in a greased cookie pan about ½" thick. Smooth the top surface with spatula. 9. Cut into diamonds or squares of your choice. 10. Store in refrigerator. |
