Traditional Balushahi RecipeIngredientDonuts 1. Maida (All purpose flour): 6 cups 2. Baking soda: ½ teaspoon 3. Cardamom powder: ½ teaspoon 4. Un-salted Butter or Ghee: 1 Cup 5. Dahi yogurt: ¾ Cup Syrup 1. Sugar: 8 Cups 2. Water : 3 Cups Crushed Pistachio nuts: ½ Cup
MethodStep 1: Syrup Bring water to a boil. Add sugar. Cook syrup till you have a two thread consistency.
Step 2: Donuts Mix dry ingredients Maida, Baking Soda and Cardamom. Step 3: Cut in butter resembling bread crumbs. Step 4: Add Dahi yogurt 1 Tablespoon at a time and knead to form very stiff dough. Step 5: Divide dough into 1 to 1½ balls.
Step 6: Preheat vegetable oil in the deep fryer to 325ºF Step 7: Press the dough ball into a Patty. Depress the center slightly. Don't put a hole as in doughnuts, just deep depressions. Step 8: Fry doughnuts till golden brown. Step 9: Use tongs to dunk the doughnuts in the syrup and remove them. Step 10: Sprinkle crushed pistachios over the doughnuts. Quicker recipeUse any brand 'Biscuit Dough' available in American Grocery stores. Make sure the dough is regular variety and not with buttermilk. Use the biscuit dough to make Doughnuts. Saves a lot of time. |
