Cashew (Kaju) Katli Recipe

These fudge like squares are made with Cashews Sugar Corn-syrup and Ghee

 

What is Katli?

Ingredients

1. Cashews: 3½ Cups

2. Sugar: 1¾ cup

3. Water: 1¾ cup

4. Corn Syrup: 2 Tablespoon

5. Ghee: 1½ Tablespoon

6. Coarsely ground Cardamom: ½ teaspoon

 

Method

1. Grind Cashews in a food processor in Pulse mode.

2. Add water and sugar. Cook in a heavy bottom pan to 224° F

3. Turn down temperature to low.

3. Add Corn syrup and Ghee. Stir well.

4. Turn off heat. Stir in Ground Cashews, and cardamom.

5. Let it cool to 150° F.

6. Pull and gather. Knead to form dough.

7. Set in a greased cookie pan about ½" thick. Smooth the top surface with spatula.

8. Cut into diamonds or squares of your choice.

9. Store in refrigerator.
