Atta Pinni RecipeMade with whole grain wheat flour nuts sugar and milk This is a Punjabi dish. This dish can be made with whole wheat flour, Besan, Moong Atta, or Urad Atta. You may add Khoya or a cream cheese. It is called Pinni because of the shape.
Ingredients1. Whole grain wheat flour: 2 Cups 2. Ghee: 1 cup 3. Powdered sugar: 2 cups 4. Cardamom seeds: ½ teaspoon 5. Milk: ¼ Cup 6. Finely Chopped nuts: ½ cup Almond, Pistachios, Cashews
Method1. Heat Ghee in a heavy bottom pan. Add four. Roast flour at low heat till it starts to turn light brown. Turn off heat. Let it cool. It should be warmer than room temperature. 2. Process sugar in food processor to form powder. Add Cardamom seeds. Process about 5 seconds. Add sugar and cardamom to mixture. Mix in well. 3. Add in nuts. 4. Sprinkle milk over the mixture. You don't want the mixture wet, just slightly damp. 5. Put a handful in your palm. Close the fist putting pressure on the mixture to a form with finger impressions. This form is called Pinni. 6. Store Pinni in refrigerator. |
