Almond Ice Cream RecipeIngredients are blanched almonds whole milk heavy whipping cream sugar and egg yolks Use of food processor really helps in the recipe.
Ingredients1. Blanched Almonds: ¼ Cup 2. Whole Milk: 2 Cups 3. Heavy whipping cream: ¾ Cup 4. Sugar: ½ Cup 5. Egg yolks: 3 5. Almond extract: 1 teaspoon (optional)
Method1. Ground almonds in the food processor. 2. Add milk, cream, sugar, and egg yolk to the processor. Process till smooth paste is formed. 3. Heat the mixture to 175º F. Do not let it come to a boil. The egg yolks will start to curdle at high temperature. Cook till mixture reaches custard like consistency about 10 minutes. If the back of the spoon is nicely coated, shutoff the heat. Now you have Ice cream mix. Let the mixture come to room temperature. 4. Stir in the Almond extract. AgeingPut the Ice cream mixture in the refrigerator for 12 hours.
Make Ice cream per the Ice cream maker instructions. Remove the ice cream from the ice cream maker and put in the freezer for four hours before serving. |
