Fat Free yogurt Recipe

The easiest way to make fat free yogurt is to use Instant Fat Free dry milk. This will make you one quart of yogurt.

Ingredients

1. Water: 3¾ Cups

2. Fat free dried milk: 1 cup
3. Starter Culture: ¼ cup

I use Dannon's Natural Regular Yogurt with live culture. Save ¼ cup from this batch for your next batch.

 

Method

1. Reconstitute milk by mixing water and fat free dried milk.

2. Heat the re-constituted milk to 115° F.

It is not necessary to heat it to 200º F.

3. Turn off heat. Remove one cup of milk.  Add starter culture. Mix well. Return to the main body of milk and stir well.

4. Incubate in a warm place for 6 hours.

Note: You have to keep the milk between 98° F to 115° F for proper incubation. I wrap it in a blanket and put it on a heating pad at low for about 6 hours.

5. Cool it in the refrigerator for about two hours before using. You should have a perfect batch of Dahi.
