Aaru Murabba (Peach Preserves) Recipe

Fresh peach Murabba (sweet preserve) in sugar syrup. Select just ripened peaches, that are still very firm

 

Ingredients

1. Peaches: 3 pounds

Syrup

1. Water: 2½ Cups

2. Sugar:  3 Pounds

3. Salt: 1/8 teaspoon (pinch)

4. Lime juice: 1 Tablespoon

Juice of one fresh Lime

5. Cinnamon stick: 2 (3"x¼" wide). Broken in halves

6. Cloves: 6

 

Method

1. Peel peaches. Cut in half vertically. Remove and discard stone. Cut each half vertically in to 3 or 4 slices.

2. Mix water, salt, lime juice, sugar and cinnamon and cloves. Bring it to a boil.

3. Heat to 220º F or one thread consistency

4. Add peach slices. Simmer on low till peach slices  are just tender and slightly translucent. This will further thicken syrup

5. Turn off heat. Let it cool to room temperature

6. Transfer the contents to sterilized jars. Secure lid tight.

 

Store in cold dry place. Good for sixty days
