The pickles are aged in Imrit baan in hot sun. The Imrit baan is made of porcelain or stoneware. The Imrit baa absorbs the heat from hot sun and slowly increases the pickle temperature over 148º F but below 185º F Food born microorganisms start to die when the temperature rises over 148º F. At 160º F, most of the microorganisms are dead. When the the temperature reaches between 180º F and 185º F, the pickle is pasteurized to avoid spoilage. This helps destroy many microorganisms and enzymes without making pickles tender. If the temperature reaches over 185º F, the pickle will start getting softer. In reality, hot sun can not raise the temperature over this threshold. I have not seen any specific study to verify actual temperatures reached. |
