Lal Lachha Red Relish Recipe

The red color in this onion relish is derived from Degi Mirch. This is decorative condiment normally served at social gatherings. It has more to do with the presentation in how the ingredients are cut then anything else. In India, Sambar Onions are used that like a cross between shallots and red Bermuda onions. I have chose to use Red onions. You may chose shallots.

 

Ingredients

1. Red Onion: 2

2. Serrano: 3

3. Garlic Cloves: 4

4. Ginger: 5"

5. Lime: 1

6. Cilantro: ¼ Cup

7. Fresh Peppermint leafs: 6

8. Fresh Lime juice: ¼ Cup

9. Degi Mirch (Paprika): 2 teaspoons

10. Salt: 1 teaspoon or to taste

11. Cayenne powder: 1 teaspoon or to taste

12. Sugar: Pinch

 

Method

Step 1 Prep

1. Slice onion into very thin rings

2. Slice Serrano in to thin vertical strips. Remove seeds and white membrane to reduce heat if desired

3. Peel and mince Garlic

4. Peel and cut Ginger in to thin long strips

5. Wash and cut lime into eight or more vertical wedges. Remove seeds

6. Wash and pluck the cilantro leafs discarding stems

7. Wash, pluck leafs and finely chop leafs.

Step 2 Marinate

Combine Lime juice, paprika, salt, Cayenne, and sugar.

Step 3 Rest

Put prepared ingredients in a glass bowl. Pour the marinate over. Toss till everything is well covered. Let it rest covered in refrigerator for 2 hours
