Kesar Tikka Masala (Saffron Kebab dip) Recipe

Kesar means Saffron. This is rich creamy saffron dip made with almond pistachios and heavy whipping cream

 

Ingredients

1. Saffron strands: 6 (1/8 teaspoon)

2. Whole milk: ½ Cup

3. Blanched Pistachios: 2 Tablespoon

4. Blanched Almonds: ¼ Cup

5. Ghee: 1 Tablespoon

6. Heavy whipping cream: ¾ cup

7. Ground Cardamom: ½ teaspoon

8. Salt: ½ teaspoon or to taste

9. White ground pepper: ½ teaspoon

 

Method

1. Heat milk in microwave oven for 30 second on high, or on stove top.

2. Crush saffron strand with finger tips and add to hot milk. Let it stand for five minutes.

3. Grind blanched nuts in a food processor or a blender.

4. Heat Ghee in a heavy bottom pan. Add nuts, sauté for about two minutes.

5. Add remaining ingredients. Cook on low till the dip thickens up. (10 minutes)
