There are two types of Chutney (Chatni, and Chutney-conserve), Murabba (Preserve), Lachha (Uncooked Relish), Dips, and Pickles. During British Raj, Chatni was adopted as a dip or a spread. Traditional pickles are made by a drying process in hot-sun. There are over 3,000 different Chutney and Pickles used in India. We will limit our recipes to North India, and raw items readily available in United States.
