Gulkand (Rose petal preserve) Recipe |

| Sweet preserve made with fresh rose petals and jaggery. This preserve is prescribed in Ayurvedic healing
According to Ayurvedic healing, Gulkand reduces pitta, heat in the body. You may use either rose petals, or a combination of rose petals and rose hips. Rose hips are excellent source of Vitamin C. Normally, the mixture is aged in hot sun for ten days. It takes about 30 days for the flavors to fully blend in Ingredients1. Rose petals, washed and paper towel dried: 1½ pounds 2. Rose hips: ½ pounds If you don't like rose hips, substitute with same amount of rose petals 3. Jaggery, grated: 1½ pound 4. Sea-salt: ½ teaspoon 5. Cinnamon stick 3"x¼": 2 Broken into 6 pieces 6. Cloves: 6 7. White vinegar (5% Acid): 1 Tablespoon Any Sirka will do, it is added for extended shelf-life.
Method1. Mix all ingredients well in a cookie tray. Preheat oven to 200º F. Bake for 2 hours with door open by 4" on the top. This emulates hot-sun drying. Shut off oven. Let the tray remain for another four hour. Repeat the process for 10 days. 2. Transfer contents to sterilized glass jars. Use a long teaspoon to tamp down mixture and release air bubbles. Secure lid 3. Age Gulkand for another 20 to 30 days. This allows the flavors to fully develop and blend in Gulkand can be stored at room temperature for six months. |
