Amrood Chutney Conserve (Guava Chutney) Recipe

Guava is a tropical fruit, now coming in to United States from Mexico found in major stores specially in southwest


Ingredients

Basic Phase

1. Guava: 1 Pound, Peeled, cored and cubed
2. Vinegar: 1 Cup 
3. Water: 2 Cups 
4. Cayenne powder: 1 teaspoon 
5. Sugar: 1½ cup 
6. Salt: 2 teaspoons 
7. Ginger: 1"x½" Peeled and chopped
8. Garlic Cloves: 2 peeled and minced

Finishing Phase

1. Raisins: 2 Tablespoons
2. Blanched sliced Almonds: 2 Tablespoons

3  Green Cardamom seeds cracked: 1 teaspoon

 

Method

Basic Phase

1. Put all ingredients in a heavy bottom pan.

2. Turn on heat. Bring it to a boil

3. Turn down heat. Simmer on medium heat to 220º F or till desired consistency has been reached. About 25 minutes

Finishing phase

1. Add finish phase ingredients

2. Simmer for 5 minutes

3. Turn off heat. Let the chutney cool to room temperature.

4. Transfer to sterilized jar.

5. Store in a cool dry and dark place
