MurabbaMurabba is made with a single fruit. Traditionally, large pieces or whole fruits are soaked in Alum and edible lime to firm up the cell wall. After firming up, the fruits are cooked in a sugar syrup till the fruits becomes translucent and plump. The syrup is flavored with aromatic spices such as: Cinnamon, Cloves and Cardamoms. Eventually, the fruit is suspended in a thick syrup of one thread consistency.

Fruit Chutney Conserve What is Chutney?.Chutney is western adaptation of Indian Chatni Chutney starts out like a Jam, and finished like a Conserve. Chutney is not jelled, it does not rely on the pectin. Chopped or crushed fruits, vinegar, spices and sugar are cooked to form a spicy sweet and tart condiment. The dried fruits, nuts and spices are added near the end of cooking.
ConserveConserve is a western condiment similar to Cooked Fruit Chutney. Conserve is made with a mixture of more than one fruit. The fruits are chopped and cooked with sugar until it becomes thick. Near the end of cooking dried fruits nuts and spices are added. The texture is comparable to Chutney. Conserve does not rely on pectin to jell. You need a thermometer to ensure that mixture has reached 220º so the conserve is set. Conserve is not jelled, it is set.
JamJam is a western condiment similar to Preserve and Murabba, except it is a spread. Chopped or crushed fruits are cooked with sugar, pectin and lemon juice. Jam does not have solid pieces as in Preserve or Murabba. Jams must have precise amount of pectin as opposed to Murabba.
JellyJelly is a western condiment Jelly is a clear condiment made with fruit juices lemon juice sugar and pectin. Pectin gives it the firmness that holds its 'shaky' shape at room temperature. Jelly contains no fruit pieces as opposed to Jam
MarmaladeMarmalade is a western condiment Marmalade is made with citrus fruit (flesh and peel), lemon juice sugar and pectin. The fruit flesh and peel are suspended throughout jelly base. The sourness of the peel counters the sugar taste. |
