Jardaloo Chutney (Apricot Chutney Conserve) RecipeMade with fresh apricots sugar vinegar and spices.
IngredientsBasic Phase1. Apricots: Pitted and Cubed: 6 Cups 2. Onions: 4 finely chopped 3. Fresh Ginger: 1"x½" Peeled and chopped 4. Salt: 2 teaspoons 5. Brown sugar packed: 1¾ Cup 6. Vinegar (5% Acetic Acid): 2½ Cup 7. Hot Cayenne pepper ground: ¼ teaspoon 8. Black Mustard Seeds cracked: 1½ teaspoon 9. Turmeric powder: 1 teaspoon Finishing phase1. Seedless Golden sun-dried Raisins: ¾ Cup 2. Cinnamon Cracked: ¾ teaspoon 3. Cloves Cracked: ½ teaspoons
MethodBasic Phase1. Put all ingredients in a heavy bottom pan. 2. Turn on heat. Bring it to a boil 3. Turn down heat. Simmer on medium heat to 220º F or till desired consistency has been reached. Finishing phase1. Add finish phase ingredients 2. Simmer for 5 minutes 3. Turn off heat. Let the chutney cool to room temperature. 4. Transfer to sterilized jar. 5. Store in a cool dry and dark place |
