Chicken Rogan Josh Recipe

This is an adaptation of traditional Rogan Josh that is made with Mutton. Recipe has been modified significantly

 

Ingredients

1. Ghee: ¾ cup

2. Skinless boneless Chicken breast 1" pieces: 2 pounds

3. Onions, Peeled  quartered: 3

4. Ginger, peeled: 2"x1"

5. Garlic cloves, peeled: 8

6. Cinnamon stick broken up: 1

7. Cloves: 6

8. Black Cardamom pods cracked open: 10

9. Black peppercorns: 10

10 Aniseed: 1 teaspoon

11. Bay leaves: 2

12. Ground Coriander: 1 teaspoon

13. Ground Cumin: 2 teaspoon

14. Ground Cayenne: 2 teaspoon

15. Fine-grain sea salt: ½ teaspoon

16. Natural Regular Plain yogurt: ¾ cup

17. Saffron, crushed: 1/8 teaspoon

18. Water: 1 cup


Method

1, Heat Ghee in a sauce pan. Fry chicken pieces to brown. Remove with a slotted spoon and set chicken aside

2. Grind Onion Ginger and Garlic in a food processor with minimum water. Add this paste to hot Ghee. Fry on medium heat till water is gone and onions start to turn brown. About 10 minutes

3. Add Cinnamon, Cloves, Black Cardamom pods, Black peppercorns, Aniseed, and Bay leaves: Fry about one minute.

4. Add Coriander, Cumin and salt, Fry one minute

5. We will add yogurt in two stages before adding chicken and after adding chicken. Add half of the yogurt. Stir and cook till yogurt is blended in and consumed. Add chicken and remaining yogurt.  Stir and cook till yogurt is almost al gone. You have almost dry gray mixture

6. Sprinkle saffron over the Chicken, and add water. Stir. Bring to a boil. Turn down heat. Cook on low heat for about 25 minutes till the chicken is tender and the Ghee will start coming up to the top surface.
