Chicken Pathia RecipeThis is a sweet sour and spicy chicken curry. Pathia is also called Patia. This is a Parsi dish, a fusion of Persian (Iran) and Gujarat Cuisine
Ingredients1. Peanut oil: 3 Tablespoons 2. Skinless boneless Chicken breast cubed 1": 1 Pound 3. Onions finely chopped: 2 cups 4. Salt: ¼ teaspoon 5. Fresh Garlic minced: 2 teaspoons 6. Serrano: 2 finely chopped 7. Fresh cilantro finely chopped: 2 Tablespoons 8. Turmeric powder: ¼ teaspoon 9. Cumin powder: 1 teaspoon 10. Coriander powder: 1 teaspoon 11. Cayenne ground: 1 teaspoon 12: Roma Tomatoes Chopped: 1 cup 13. Juice from 1 fresh Lime: 1 Tablespoon 14. Brown sugar: 2 teaspoons 15. Water: ½ cup
Method1. Heat oil in a heavy sauce pan. Add Chicken. Sauté chicken till it starts to turn brown and juices start to flow. This means chicken is almost done. Use a slotted spoon and remove the Chicken and set it aside. 2. Add onions and salt. Fry, till they just start to turn brown. About 5 minutes 3, Add Garlic Serrano and Cilantro. Fry about two minute 4. Add Turmeric, Cumin, Coriander, and Cayenne. Fry about one minute 5. Add tomatoes. Fry till it is a shiny paste, the oil seems to separate 6. Add Lime Juice, Brown sugar, and water. Bring to a boil. Adjust spices. 7. Add chicken. Simmer 10 minutes. Turn off heat. Let it rest 10 minutes before serving |
