Chicken Do Piyaz Recipe

Chicken Do Piyaz is adaptation of traditional Do Piyaz Mutton Curry. The modern cooking style has been changed to resemble the Bhuna dish
Use of onions is divided. Half the onions are cut into large slices and almost caramelized. The other half is chopped fine and become a part of sauce. At the end the sliced onions are added back in to the dish
I have used chicken breast in this recipe. I have tried this recipe with chicken thighs, some say with even better success.
 

Ingredients

Step 1 Ingredients
1. Ghee: 2 Table spoons
2. Onions, peeled, sliced fajita cut about ½" wide: 3 Large onions
Step 2 Ingredients
1. Skinless boneless chicken breast, cubed 1": 2 Pounds
2. Fresh ginger, peeled finely chopped: 2"x1"
3. Fresh Garlic cloves, minced: 8
4. Cumin Powder: 1 teaspoon
5. Coriander Powder: 1½ teaspoon
6. Fenugreek seed Powder: 1 teaspoon
7. Turmeric Powder: ½ teaspoon
8. Ground Hot Cayenne: 1½ teaspoon
9. Fine-grain sea salt: ½ teaspoon
10. Ghee: 3 Tablespoon
11. Water: ¼ cup
Step 3 Ingredients
1. Medium onions, Peeled finely chopped: 2
2. Natural Regular Yogurt 2 Tablespoons
3. Roma tomatoes, diced: 3
4. Water:2 Tablespoons
5. Ghee: ¼ cup
Step 4 Ingredients
1. Cilantro, chopped: 2 Tablespoon
2. Green Serrano, Chopped Remove white pith to reduce heat: 2

Method

Step 1
1. Heat Ghee in sauce pan. Add onions. Fry on medium heat till the edges of the onion slices start to turn brown
2. With A slotted spoon, remove the onions and set them aside.
Step 2
1. In a heavy sauce pan combine: Chicken, Ginger, Garlic, Cumin, Coriander, Fenugreek, Turmeric, Cayenne, Salt, Water and Ghee. Stir well so chicken is well coated.

2. Turn on heat. Cook over medium heat, stirring occasionally.  Cook about 10 minutes. Make sure, you do not burn spices. If needed add one more Tablespoon of water

Step 3
1. Add onions, Stir and cook for about 5 minutes
2. Add yogurt. Fry till yogurt is consumed
3. Add tomatoes. Stir. Cook till tomatoes have turned into paste about 5 minutes
4. Add Ghee and water. Stir. Continue cooking about 15 minutes till the chicken is tender and the oil starts to leave the spices.

Step 4
Add onions from Step 1. Stir in Cilantro and Serrano. Let it rest
