Flour Tortilla RecipeFlour Tortilla is made of All purpose flour leavened with baking powder.
The recipe is included for for comparison purpose with Roti .
Ingredients1. All Purpose Flour: 3 Cups 2. Salt: ½ teaspoon 3. Baking Powder: 1 teaspoon 4. Vegetable shortening: ½ Cup 5. Hot water: 1 Cup Flour for dusting and rolling
Method1. Mix Flour, salt, and baking powder. 2. Cut in vegetable shortening to resemble crumbles. 3. Add water, knead dough for about 5 minutes. 4. Gather dough in a ball. Cover with a damp kitchen towel or a plastic film wrap. Let it rest for 15 to 20 minutes. 5. Divide dough into 10 equal size balls. One ball will make one tortilla. 6. Flatten one ball to form a patty. 7. Roll out to form a 6 to 9" diameter disc no thicker than a dime (10¢ coin). 8. Heat a griddle medium to hot. Put the disc on the griddle. Cook about 30 seconds. Use a turner to lift an edge to see that the underside has brown spots. On the top, you will notice some bubbles. 9. Flip over the tortilla to finish cooking another 30 seconds.
Yogi's Notes1. The Roti is made without baking powder or cutting in vegetable shortening. 2. You can make Tortilla by replacing All purpose flour with Atta, and Vegetable shortening with Ghee. |
