How to store and keep warm 24 Chapati (Roti) for three hours?

For a small party, you may store fresh hot 24 Chapati in a heated equipment and keep Chapati warm till served.

You may choose one of the following three methods based on equipment that is convenient to you. The equipment should be between 160 F to 180 F. The temperature should not exceed 200 F. A lightly moist kitchen towel (cotton) is used to prevent drying.
 

1. Crock-pot

Hot Chapati are stored in crock-pot (slow-cooker) at 'low' temperature. This is same about 165 F.
- Turn on crock-pot at 'low'. Wait 20 minutes so the pot is preheated. Keep the crock-pot ON at low during the entire period of storage.

Put up to six Chapati on an Aluminum foil. Roll-up to form a cylinder. You will have 4 rolls, each containing 6 Chapati.
- Wet a kitchen towel. Squeeze out all the water. Heat in microwave for one minute at high. The kitchen towel will be steaming.
- Wrap the Chapati Rolls in the hot kitchen towel.
- Put the wrapped Chapati in the crock-pot. Close the lid. Keep the temperature at low. The lightly moistened kitchen towel ensures proper humidity and prevents the Chapati from drying out, or getting chewy.


2. Conventional Oven

Hot Chapati are stored in preheated oven at 165 F. If your oven does not allow a setting lower than 200 F, you may keep the door open by about ".
- Preheat oven at 165 F for about 20 minutes. Keep the oven ON at 165 F during storage.

- Wet a kitchen towel. Squeeze out water. Heat in microwave for one minute at high. The kitchen towel will be steaming.

- Put the Dutch oven on the middle rack of the pre-heated oven.


3. Pizza Delivery Bag with Heating element

Pizza Bags are used for Pizza delivery. They are also sold on the internet. The heating element has a built-in thermostat to maintain 165 F. You can buy heating elements for either use in a car (powered by cigarette lighter receptacle) or 115 volt (normal household electric outlet). The capacity of the bag for this purpose would be to hold two 12" Pizza.
- Plug the heating element in to 115 volt electric outlet for about five minutes to preheat the bag. Keep the element plugged for the duration of storage.
- Wrap
six Chapati in Aluminum foil to make a stack. You will have 4 stacks, each containing 6 Chapati.
- Wet a kitchen towel. Squeeze out water. Heat in microwave for one minute at high. The kitchen towel will be steaming.
- Wrap the Chapati stacks in the hot kitchen towel.
- Put the Chapati in Pizza bag. Close the bag. The lightly moistened kitchen towel ensures proper humidity and prevents the Chapati from drying out, or getting chewy.
