Modern method to stuff Paratha (Pratha)The dough is divided in to two halves, rolled out separately to make top and bottom of Paratha We will assume that you have: 1. Prepared the filling for one stuffed Paratha. 2. You have one ball of dough to make one stuffed Paratha.

1. Divide each dough ball in to half, making two smaller dough balls. 2. Roll out one small dough ball to about 5" diameter Chapati. Figure 1. Set aside. 3. Roll out second small dough ball same size as the previous Chapati. Figure 2. 4. Evenly spread about 2 Tablespoons of filling leaving about ¼" space around the outer edge. Figure 3. The filling is shown in pink color. 5. Put the first Chapati on top of the filling. Figure 4. Press the center to let air out. Then press the grey area to seal the filling. Some of the restaurant will flute the grey area to give it a nice pattern. 6. Figure 5. With a rolling pin roll out Paratha to about 6" diameter. This helps the filling to actually stick to the dough. |
