Sheer Chai Recipe

'Shir' in Farsi means 'Milk'. This is a salty version of Garam Chai. Sheer Chai originated in Kashmir.

In Kashmir, it is also called as 'Noon Chai'. The distinct feature is its peachy color (due to baking soda) and salty taste. Normally, 'Pahari' tea leaves are used. Pahari tea leaves are stronger Green tea leaves. The tea leaves are brewed for sometime to make the tea very strong. I will use a combination of Green tea and regular Black tea bags to achieve the same result.

 

Ingredients

1. Water: 3½ cup

2. Regular Tea bags: 1

3. Green Tea bags: 2

4. Baking soda: 1/8 teaspoon

5. Salt: ¼ teaspoon

6. Regular milk: 1¼ cup

7. Heavy whipping cream: ¼ cup

8. Black Peppercorn: 2

9. Cinnamon stick broken: 1"

10. Green cardamom seeds from 4 pods

11. Blanched Almonds: 4

 

Method

1. Bring Water to a boil.

2. Add Tea bags, and baking soda.

3. Turn down heat. Steep for 15 minutes on low heat.

The tea will not be brown in color, it will  be reddish due to baking soda.

4. Add  Salt, Regular milk, and Heavy whipping cream, Black Peppercorn, and Cinnamon. Bring it to a boil. Steep another 10 minutes. The color will be peachy color.

5. Turn off heat. Strain

6. Crush cardamom seeds and almonds to form very coarse powder.

Put  ½  teaspoon of crushed almond/cardamom in a cup. Fill up the cup with with hot tea.
