Spice mix (Chooran Churan) for balancing Pitta Recipe

Spice mix formulated to balance over-aggravated Pitta. Balancing Pitta may be useful in reducing inflammation and help with Arthritis. The other major symptoms of aggravated Pitta are poor digestion and slow metabolism. Balancing Pitta also helps reducing weight.
1. Balancing Taste (Sweet Bitter Astringent) spices should be more than Aggravating Taste (Sour Salty and  Pungent) spices
2. Salt and Sugar both draw moisture from atmosphere. The mixture will turn clumpy or soggy. Therefore, the mixture should be stored in a air-tight jar.
3. Traditionally, one would use Mulathi (Liquorice) in India as a base. Mulathi is sweet and pungent. In United States, Mulathi is not readily available. It is substituted with Anise seeds or Fennel seeds. Anise and Fennel are comparatively not very sweet.

 

Ingredients

1. Fennel seeds (Sweet Pungent) ground: 6 teaspoons
2. Coriander seeds (Bitter Pungent Astringent) ground: 2 teaspoons
3. Cumin seed ground (Pungent): 2 teaspoons
4. Ground Fenugreek seeds (Astringent Bitter): 1 teaspoon
5. Turmeric Powder (Bitter Pungent Astringent): 1 teaspoon
6. Kala Namak (Salty): 1 teaspoon
7. Amchoor Ground dried sour mango powder (Sweet Sour): 1 teaspoon
8. Pure Cane sugar (Florida Crystals): 1 teaspoon
 

Method

1. Mix all the ingredients well. I put all the spices in the food processor and process it for about 5 second. The result is well mixed powder

2. Transfer the mixture to an air-tight jag.
