Control Inflammation - Ayurveda Balancing Pitta

Overactive aggravated Pitta can cause chronic inflammation, slow metabolism and poor digestion

- Eat foods cool to warm. Avoid temperature hot foods

- Eat foods with Ayurveda Rasa classified as Bitter Sweet Astringent. Don not eliminate but eat in small quantity foods that are classified as Sour Salty Pungent

- Reduce foods that have heating effect, examples: salt oil spices pickles

Rasa Table - Grains
Freshly made warm Whole-grain breads made with Barley Buckwheat (Kuttu) and Rye are preferred. Millet (Bajra Jowar) Corn are acceptable.
Rasa Table - Dal Beans
All Dals and beans are acceptable. Reduce consumption of Black Matpe (Urad Dal).

Rasa Table - Dairy products
All dairy products are acceptable except for made by fermentation (Yogurt) or coagulating (Paneer).

Rasa Table - Fruits
Sweet Astringent fruits are preferred: Apples, Bananas, Peaches Pears Plums and Figs. Sweet fruits are acceptable in moderation: Dates coconut and cantaloupes.

Rasa Table - Vegetables
Carrots are preferred. Select Bitter, followed by Astringent and than sweet astringent vegetables. Avoid Pungent vegetables, cooked onions are acceptable., followed by sweet astringent and than  followed by Karela, Methi.

Rasa Table - Meats
All meats are acceptable. Mutton is preferred

Rasa Table - Spices
Sweet Bitter Astringent spices should be selected. Salt, souring agents (Tamarind, Amchoor, or Lime juice) and pungent spices such as black peppers and red chili peppers should be reduced. Fenugreek seeds, fresh or dried leaves are good.

Rasa Table - Cooking oils fats
Sesame oil is preferred. Peanut oil, Safflower oil, and Canola oil are good.

Rasa Table - Nuts and Seeds
Pumpkin Cantaloupe and water-melon seeds are good. Almonds Cashews and Coconut are acceptable
Rasa Table - Herbs and Base Vegetables
Most of the fresh herbs and vegetables are ground and sautéed in Ghee. Fresh Cilantro and Peppermint is added as a garnish. All these items are pungent and should be reduced.
Rasa Table - Sweeteners
Sugar cane Jaggery is preferred sweetener
