Ingredients1. Rava (Cream-of-wheat): 1 cup 2. Canola oil: 1 Tablespoon 3. Brown Mustard Seeds: 1 teaspoon 4. Onion: 1 cup, peeled finely chopped 5. Salt: ½ teaspoon or to taste 6. Serrano: 2 Split in half. Remove seeds and white membranes to reduce heat to suit your taste. Chop coarse 7. Fresh Ginger: 1"x1", peeled and chopped 8. Carrot: 1 Scrubbed and grated 9. Frozen Baby Peas: ½ cup Thawed 10. Split Cashews: ¼ cup (Optional) 11. Lime Juice: 1 teaspoon 13. Cilantro: 3 Tablespoons washed leafs picked stem discarded chopped 14. Grated Coconut: 2 Tablespoons (Optional for garnishing) Method1. Heat a Heavy bottom frying pan. Add Rava. Dry roast till it starts to turn lightly brown. Shut off heat. Remove Rava and sit it aside. 2. Heat oil in the heavy bottom pan. Cover. Cook till mustard seeds start to sputter and pop about 2 minutes. 3. Add onions, salt, ginger, Serrano. Sauté till the onions turn brown. About 5 minutes 5. Add Rava, and Cilantro. Stir 6. Cover and simmer on low heat for about 4 minutes or till all the water is absorbed. 7. Garnish with coconut before serving |
