Aloo Paneer Tikki Ricotta Cheese Patty RecipePan fried breaded potato and ricotta cheese patties
This is my favorite Tikki. You can use crumbled Paneer, or Ricotta Cheese. I will use Ricotta Cheese here.
IngredientsFish Mix1. Ricotta Cheese: 12 oz Use a paper towel to remove most of the water. 2. Shallots: 3 Tablespoons finely chopped. 3. Garlic: 1 Clove, peeled and minced 4. Potatoes: 2 Medium size, Boiled, peeled, forked 5. Kasoori Patta: 1 Tablespoon 6. Salt: ½ teaspoon or to taste 7. Cayenne powder: ¼ teaspoon or to taste 8. Nutmeg: ¼ teaspoon freshly grated 9. Dahi Yogurt: 2 Tablespoons Breading Mix10. All purpose flour: 3 Tablespoons 11. Cream of wheat: 1 Tablespoon 12. Salt: pinch 13. Cayenne pepper: pinch 14. Amchoor: pinch
15. Canola oil: ¼ cup for frying
MethodStep 1: Patty mix1. Mix Ricotta cheese, shallots, mashed potatoes, salt, pepper, shallots, garlic, Kasoori Patta and nutmeg. 2. Add one to two tablespoon to make a damp mixture. You don't want to the mix to be wet or runny. Step 2: Breading MixThe breading is dry mix of all purpose flour (Maida), cream of wheat (Sooji), salt, pepper and Amchoor. If you don't have Amchoor, add citric acid. Step 3: Patties and Frying1. Form patties about ½" thick, and 3" round. Dust the patties with breading mix. Let the patties rest for ten minutes. You will see the breading absorb moisture. Dust the patties again before frying. 2. On a griddle heat a teaspoon of canola oil. The griddle must be low to medium heat. You want to slowly cook the patties. Fry the patties till underside starts to get brown about three minutes. Turn the patties over and cook another 3 minutes. |
