Goal Guppa Recipe

The Goal means round. Guppa is to eat in one attempt,  stuffing it in your mouth without breaking it

 

Goal Guppa is crispy hollow sphere made flour. With a finger you put a hole in it and fill with some stuffing and put the whole thing into your mouth without taking bites.

The recipe and method is same as making the deep fried bread Poori . Sometimes, Goal Guppa are even called Poori. 

 

Ingredients

Dough Cookies

1. Fine Semolina: 1 Cup
2. Baking soda: pinch (1/8th teaspoon)
3. Salt: ½ teaspoon
4. Ghee or Vegetable Shortening: 1 Tablespoons
6. Water: 7 Tablespoons

7. Canola oil for deep frying

 

Method

Dough Cookies

1. Mix and sift items 1 through 3. Cut in Ghee till crumbly.  Add water little at a time and knead. You should have a slightly stiff dough. Cover dough with damp dish towel, and let it rest for 30 minutes.

2. Roll out dough in to a thin sheet about the thickness of a Dime (10¢ coin).

3. Use a cookie cutter to form 1" diameter dough cookies. Repeat till all the dough cookies are cut. Cover each layer of dough cookie with a damp dish towel

4. Let the dough cookies covered with damp towels rest for 10 minutes.

Deep frying

1. Pre heat deep fryer oil to 320º F. Its not a mistake. Normal frying temperature is 350º F. We want to fry at a slightly low temperature. This allows more water to evaporate while frying.

2. Put a batch of dough cookies in the oil. Rub the surface of the cookies with a skimmer to help puffing up with steam. Keep turning over with the skimmer till both sides are crispy and brown.

 

Yogi's notes

1. The baking powder and semolina help create crispy Goal Guppa. You may replace Semolina with Maida or even regular Atta.

2. If you have added too much water, or the Goal Guppa or getting soggy for some reason. Preheat oven to 350º F and bake for 10 to 15 minutes till they are crisp again.

3. Covering with damp cloth adds humidity to the dough. This added humidity helps with formation of steam to fully puff up.
