Recipe Besan Cheela

Gluten free crepe (Cheela) made of Besan (Chickpea flour). Canola oil used for better omega 3 profile.

 

Ingredients

1. Besan (Chick pea flour): 1 Cup
2. Warm Water (100º F): ¾ Cup
3. Salt: ¼ teaspoon
4. Cayenne pepper: ¼ teaspoon
5. Ajwain: ¼ teaspoon
6. Chopped fresh cilantro: ½ Cup
7. Canola oil: ¼ Cup

 

Method

Step 1: Mix ingredients 1 through 6. Adjust spices to taste. Cover and let it rest for 30 minutes at room temperature.
Step 2: Heat a heavy griddle. Lightly baste with vegetable oil (about ¼ teaspoon)
Step 3: Use a ladle to pour the batter, spreading it out with the bottom of the ladle forming a thin pancake.
Step 4: Cook till the outer edge starts to change color to opaque to slightly brown. Dribble some oil around the edges so it seeps under the Cheela.
Step 5: Use a turner to flip the Cheela over. Let it cook for about one minute.
Step 6: Remove the Cheela and serve hot with Chutney.
