Potato (Batata) Wada (Battered Potato Dumpling) Recipe
Ingredients1. Boiled Potatoes: 5 Choose Russet potatoes. Slightly undercook. 2. Garlic: 2 Cloves, Peeled and minced 3. Ginger: ½", Peeled and chopped 4. Cilantro: 2 Tablespoon, washed leafs picked, stem discarded, chopped 5. Serrano: 2 Washed chopped 6. Cumin Powder: 1 teaspoon 7. Lime juice: 1 Tablespoon MethodStep1 Prepare Potato Patties1. Skin and mash potatoes. Mix with rest of the ingredients. 2. Pinch the mix, form a ball and slightly press it. You want about 2 to 2½" round, and ¼ to 3/8" thick patties. Set patties aside. Step 2. Prepare BatterStep 3: Fry patties1. Preheat Deep fryer to 350º F 2. Dip patties in the batter and deep fry till golden brown. It will take about 5 minutes. |
