Oven Baked low fat Paapri RecipeThis recipe requires two phase cooking. In the first phase, the Paapri are par-cooked on the hot griddle similar to making Roti. In the second phase, the par-cooked Paapri are baked in the oven.
IngredientsPar-cooking1. Maida (All Purpose Flour): 1 Cup 2. Atta (Whole wheat flour): 1 Cup 3. Cayenne powder: ½ teaspoon 4. Salt: 1 teaspoon 5. Baking Powder (Double action): 1½ teaspoon 6. Turmeric powder: ¼ teaspoon 7. Cumin Powder: ½ teaspoon 8. Dried oregano leafs: ½ teaspoon 9. Canola oil: 2 teaspoons 10. Warm Water: ¾ Cup
10. Non stick Cooking oil spray for BakingMethodPar-cooking1. Mix Ingredients 1 through 8. 2. Cut in oil. It will resemble fine crumbles. 3. Make a well in the center of dry ingredients, add water little at a time to make dough. 4. Cover the dough with plastic film and let it rest for 20 minutes. 5. Roll out a sheet of any shape as long as its is no thicker than a Dime (10¢ coin). 6. Use a Cookie cutter to cut 2" diameter dough cookies. 7. Heat a griddle just like to make Roti or Chapati. 8. Cook dough cookies for 45 seconds. Turn over and cook again for another 45 seconds. Each side should have light brown spots. Baking1. Pre-heat oven to 350º F. 2. Lightly oil spray a cookie sheet. 3. Arrange par-cooked Paapri in a single layer. 4. Lightly oil spray the Paapri. Turn each Paapri over. Lightly oil spray the par-cooked Paapri. 5. Bake for five minutes. 6. Turn over the Paapri and re-bake for 5 minutes or till lightly brown. 7. Repeat till all Paapri have been baked. 8. Let the Paapri rest for about 10 minutes to cool and get crispier.
Yogi's Notes1. You may use Maida to dust the Paapri when rolling them out. 2. If the Paapri become rancid, bake then in an oven at 350º F for 10 minutes to freshen them up. |
