Amritsar Fish Pakora Recipe

This is a dish from Amritsar (Punjab) sold by street hawkers. You can use any type of fresh water or salt water fish. The fish is cleaned and cut in to about 2" filets. The marinated fish is dipped in wet batter and deep fried. You can use serve it with any type of Chutney.

 

Ingredients

1. Fish: 2 Pounds

Marinate

1. Lime Juice: ¼ Cup

2. Ginger finely chopped: 1 teaspoon

3. Ground Black Pepper: 1 teaspoon

4. Salt: 1 teaspoon

Batter

1. Besan (Chickpea flour): 1 cup

2. Finely chopped ginger bits: 1 teaspoon

3. Minced Garlic: 2 teaspoon

4. Ajwain (Carom): 1 teaspoon

5. Ground Cayenne: 1 teaspoon

6. Crushed Red Pepper: 1 teaspoon

7. Water: ½ Cup

8. Baking Powder: 1 teaspoon

9. Salt: ¾ teaspoon

 

Deep Fryer


Method

Marinate

Combine ingredients. Stir in Fish. Let it stand about 30 minutes.

Batter

1. Combine all ingredients. The visible cayenne pepper seed and flakes from crushed red pepper and Ajwain are unique of this batter.

2. Remove fish from marinate. Discard marinate. Stir the fish in batter. Let it stand 20 minutes in the refrigerator.

Deep Fryer

1. Preheat oil in the fryer to 350º F.

2. Fry battered fish till golden brown. It will take about 5 minutes per batch being fried.
